Vesper began, as most good things do, at the tail end of a long dinner. Éloïse had spent a decade in the great kitchens of Europe and returned home to Soho with a single, quiet question — what if we slowed everything down?
We opened in 2019 with nineteen seats around a walnut counter, a small hearth, and a rule the team still keeps: no service after 22:00 is rushed. Every plate has a chef in front of it. Every wine has a story someone in the room can tell.

Our produce arrives by hand from four farms, two boats and a handful of foragers we've known for years. The menu is written the same day it's cooked. Nothing is set; nothing repeats exactly.
We are proud of what we do, but not solemn about it. Come hungry. Come curious. Stay a little longer than you meant to.
